Instructions: Beat first 4 ingredients in a large mixing bowl at medium speed with an electric mixer 2 minutes. Pour cake batter into 3 greased and floured 9-inch round cakepans.
Bake at 350 degrees for 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks. Combine fruit filling and next 3 ingredients; spread 3/4 cup between layers and remaining on top of cake. Spread Cream Cheese Frosting on sides of cake. Store in refrigerator. For Cream Cheese Frosting: Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add confectioners sugar, beating at low speed until blended. Stir in extract. ( Makes about 3 cups) This recipe yields 1 (3-layer) cake. Comments: Prevent cake layers from sticking to the cooling rack by sprinkling granulated sugar on a piece of wax paper or aluminum foil.
