Instructions: In a small bowl whisk oil and vinegar together.
In a large bowl gently combine tomatoes and rocket. Toss with dressing and place in a shallow serving bowl. Add salt and pepper. Shave thin slices of ricotta salata and place over tomato mixture. Sprinkle with basil. Like balsamic vinegar and rocket ricotta salata cheese is one of those new ingredients that foodwise Italy has been quietly enjoying for quite awhile.
