400 gm apples, Granny Smith
167/1000 cup sugar (caster)
200 gm sour cherries, pitted
1/10 tsp cinnamon, ground
1/3 cup saltanas
3/4 tbl apricot jam
60 gm butter
1/2 cup fresh breadcrumbs
1/2 tbl almonds, flaked
3 sht puff pastry

Melt 20 gm butter in a frying pan and cook the apples to just soften them. Combine in a bowl with remaining filling ingredients and mix gently to ensure the apples dont break up.

Make a rectangle from half the pastry and lay out on a lightly floured bench.

Heap the filling down center of pastry leaving a 5cm margin around the edges. Brush edges with beaten egg and lay over second half of pastry. Roll up edges on each side to seal. Pinch the ends together, brush top with egg and transfer to a baking tray.

Bake 180C/380F for 30 minutes.
