Instructions: Preheat oven to 350 F. Line a 9-inch pan square pan with wax paper and lightly coat the paper with cooking spray.
In a large bowl, combine flours, cornstarch, baking powder, salt, cinnamon, ginger, brown sugar and nuts; blend. Add fruits to dry ingredients and toss well. In a cup, lightly beat the egg, egg white, juice and oil, then stir into the flour mixture until thoroughly moistened. Turn batter into pan and spread out. Bake 25 minutes or until golden. Cool 10 minutes in pan on wire rack. Cut and cool completely. Store in an airtight container for up to one week. Email this Recipe:
