Ingredients:
Amount Ingredient
1/4 cup olive oil
1 lrg garlic clove minced
2 cup chopped leeks, white part only
1/4 lb chopped carrots - (abt 6 carrots)
1/2 tsp ground cumin
1/4 tsp cayenne pepper
8 cup chicken broth
Salt to taste
Freshly-ground black pepper to taste
Creme fraiche for garnish
(can also use Mexican crema)
Instructions:
Instructions: Heat the oil in a large saucepan over medium heat. Add the garlic, leeks and carrots and cook until the leeks are softened, 10 minutes. Add the cumin, cayenne pepper and chicken broth. Let simmer, covered, until the carrots are very tender, 15 to 20 minutes.

Puree the soup in a blender in batches until smooth.

Serve warm or cold with a dollop of creme fraiche and a pinch of chopped cilantro.

This recipe yields 4 to 6 servings.
