Instructions: Put everything except sauce, in a medium size pot and simmer for about 20 minutes. Remove chicken and cut into 1/2 inch strips, save broth for chicken noodle soup the next day. Return chicken to pot and add sauce, heat to serving point.
Garlic Potatoes About 3 pounds potatoes peeled and quartered if medium size. While chicken is simmering cook potatoes. In a small frying pan heat 2 tablespoons virgin olive oil and saute 1/2 onion chopped fine and 4 cloves garlic, if you have fresh basil, chop 1 tablespoon and add also. If not add 1 teaspoon dry basil leaves. Toss potatoes with oil mixture, serve with garlic bread and salad. Email this Recipe:
