Instructions: Place the chicken, almonds, grapefruit, onion, pepper, thyme, mayonnaise and seasoning in a bowl and mix well.
Serve on a bed of mixed salad leaves. Alternative ingredients - Diced cooked turkey or large prawns make delicious alternatives to chicken. Try using orange segments or slices of red skinned apples instead of the grapefruit. Other fresh herbs such as dill, tarragon or parsley work well in place of thyme.
