Instructions: Heat 2 tablespoons of the oil in a medium size non-stick saute pan, add red onions and cook until soft. Add the peppers and cook for an additional 5 minutes. Remove from the heat and add the chicken, apple, potatoes, thyme, parsley, salt, pepper and nutmeg, mix until combined. Divide the mixture into fourths and form into patties. Heat the remaining 1 tablespoon of the oil in the skillet over medium high heat, add the patties and cook until golden brown on both sides.
