1/3 cup Italian-seasoned breadcrumbs
1 tbl grated Parmesan cheese
1 tsp dried Italian seasoning
1/2 tsp dried thyme
1/4 tsp salt
1/4 tsp freshly-ground black pepper
4 x skinned boned chicken breast halves
2 tbl Dijon mustard
1 tbl olive oil
Instructions:
Instructions: Combine first 6 ingredients in a shallow dish. Brush both sides of chicken with mustard, and dredge in breadcrumb mixture.

Heat oil and butter in a nonstick skillet over medium-high heat until butter melts. Add chicken, and cook 6 to 8 minutes on each side or until done.

This recipe yields 4 servings.
