4 x boneless chicken breasts
1/2 tsp table salt
1/8 tsp black pepper
1/4 cup Dijon mustard
1/3 cup apple juice
1 tbl melted butter or olive oil
2 x cloves fresh garlic, crushed, peeled, finely minced
1/2 tsp dried thyme
1/4 tsp dried rosemary (crushed)
1/2 tsp paprika
1/4 cup minced Vidalia or sweet type onions
1 cup fine plain bread crumbs
Instructions:
Instructions: Heat oven to 375 degrees.

Line 9-by-13-inch baking pan with foil.

Rinse chicken in a bowl of water with 1 Tablespoon baking soda. Rinse again with clear water. Salt and pepper chicken and set aside.

In a small bowl, whisk together the mustard, garlic, apple juice, oil, thyme, rosemary, paprika. Stir in onions.

Place bread crumbs in a shallow dish. Roll chicken breasts in mustard mixture and then dredge in bread crumbs mixed with granulated sugar.

Bake for about 45 minutes in preheated oven until gold brown. Do NOT overcook.
