Instructions: 1. Heat oven to 350 degrees.
2. Sprinkle chicken breasts with salt and pepper. Heat a large nonstick skillet over medium-high heat 2 minutes; add oil. Add chicken breasts, and cook until golden, about 4 minutes per side. Transfer chicken to a large baking dish (set skillet aside for sauce). Bake chicken 8 to 10 minutes, until cooked through. Makes 4 servings. 3. Make Mushroom-Tarragon Sauce: Meanwhile, melt butter and olive oil in skillet over medium-high heat. Add onion and cook, stirring, until softened. Add mushrooms, tarragon, pepper and salt; cook, stirring, 5 minutes, until mushrooms are golden brown. Stir in wine; increase heat to high and cook 2 minutes.
