Instructions: Finely chop tomatoes. Press excess liquid from spinach and combine with tomatoes, zest, butter and parsley. Slightly flatten the chicken breasts.
Divide spinach mixture and spread over each chicken breast. Roll up chicken breasts and secure with toothpicks. Roll in breadcrumbs. Bake chicken for around 35 minutes in an oven at 350F. Remove toothpicks before serving. Email this Recipe:
