Instructions: Put the prepared chicken and giblets into a deep pan and add the water.
Bring slowly to the water boil and remove any scum. Add the sliced vegetables bay leaf peppercorns and salt. Cover and simmer very gently until the chicken is tender about 1 hour. Lift out the chicken. Strain the broth and check the seasoning; if necessary crumble in the stock cube and stir until dissolved. Makes about 1.2 litres. Email this Recipe:
