1 tsp Olive oil
1 lrg Onions -- sliced
1/2 tsp Fresh ginger -- grated
1/2 x cloves Garlic Clove -- minced
1/2 lb Chicken pieces -- skinless
1/2 lrg Carrots -- diced
1 tsp Raisins
1/4 tsp Cumin
1 tsp Turmeric
1/4 tsp Salt and pepper
1/8 tsp Cinnamon
1/8 tsp Cayenne pepper
14 oz tomatoes, stewed
1/2 med Zucchini -- 1" slice
1/2 x 15 Oz can Garbanzo beans -- drain
1 tbl Parsley -- chop
Instructions:
Instructions: Saute onions, ginger and garlic in oil. Transfer to crock pot . Brown chicken in same pan over medium heat. Add carrots, and zucchini to crock pot.

Place chicken on top of veggies.

Stir seasonings in a small bowl and sprinkle over chicken.

Add raisins and tomatoes. Cover and cook on HIGH for 4 to 6 hours. Add beans, parsley and cilantro 30 minutes before serving.

Serving Ideas: This is great with rice

NOTES: Heat either in a heavy pan on the stove or in the microwave, until hot through out and internal temperature of chicken is 165 degrees.
