Instructions: Cube 4 slices of the bread, and place in bottom of a greased 10 x 15 1/2 inch pan. In a large bowl, combine chicken (or turkey), onion, mayonnaise, green pepper, celery, salt & pepper and spoon mixture over cubed bread. Trim crusts off other 8 slices and place on top of the chicken mixture. In another bowl, beat eggs, add milk and pour over all. Cover and chill in refrigerator overnight. Before baking the next day, pour mushroom soup over all. Bake at 325 degrees F for 1 1/2 hours or until casserole is set. Last few minutes of baking, sprinkle with grated cheese.
To freeze for later use: Freeze labeled casserole instead of chilling in refrigerator overnight. Thaw overnight in refrigerator, and before baking, pour mushroom soup over all.
