Instructions: Heat oven to 350 degrees. Spray large nonstick skillet with nonstick cooking spray. Add chicken and onions; cook and stir until chicken is browned and no longer pink in center. Stir in all remaining filling ingredients; mix well. Spoon into ungreased 8-inch square (2 quart) glass baking dish.
Bring water to a boil in medium saucepan. Remove from heat. Stir in all remaining topping ingredients except paprika; mix well. Spoon topping over chicken mixture. Sprinkle with paprika. Leftover mashed potatoes form the top crust. This version is made with chicken and with Dijon seasoned mashed potatoes. Ingredient Substitution: Substitute 2 1/2 cups of leftover mashed potatoes for the topping on this pie. Stir mustard into the mashed potatoes and sprinkle pie with paprika as directed.
