Instructions: PREHEAT the oven to 200 C. Remove tips of chicken wings and cut the wings in half at the joint. Mix oil, lemon juice, tomato puree, soya sauce, herbs, garlic, salt and pepper and pour over the chicken pieces. Cover and marinate in the refrigerator for at least four hours or overnight, turning a few times. Remove the wings and reserve the marinade.
Bake wings for 25 minutes and then brown under hot grill until crisp Arrange lettuce leaves on four plates and pile wings in the centre. Heat the marinade and pour two tbs. over each plate of salad. Garnish with lemon slices. NOTES : Youll probably end up eating this salad with your fingers and mopping up the sauce with bread! Email this Recipe:
