Instructions: Place bulgur in bowl. Pour boiling water over and let stand until water has been absorbed (15 to 20 minutes). Cool.
Add chicken, tomato, green onions, garbanzo beans, bell pepper, carrot, currants, and apricots. Toss well. Sprinkle with salt, pepper, basil, and parsley. Place lemon juice, oil, garlic, cumin, curry powder, salt, and pepper in screw-top jar and shake. Pour dressing over all and toss well. Arrange lettuce on serving platter.
