Instructions: In a three to four quart saucepan, brown one pound of cubed, skinless chicken in one tablespoon of margarine or butter. Remove the chicken and set it aside.
Bring to a boil, cover and simmer for 15 minutes, stirring occasionally. Add 1/2 cup of frozen peas or mixed vegetables and cooked chicken. Cover and cook for five minutes, stirring occasionally. Serve when the rice is tender and the liquid is absorbed. Email this Recipe:
