1 lb cubed, skinless chicken
1 tbl margarine or butter
----------------- In the same saucepan, add: ----------------
1 tbl margarine or butter.
1 cup uncooked long grain rice.
1 x chopped carrot.
1 sm onion (optional).
and cook over medium heat, stirring until rice is brown. Add:
1 can (10 ounces) of low sodium, clear chicken broth.
1 can (10 ounces) condensed cream of mushroom soup.
1/8 tsp pepper.
Instructions:
Instructions: In a three to four quart saucepan, brown one pound of cubed, skinless chicken in one tablespoon of margarine or butter. Remove the chicken and set it aside.

Bring to a boil, cover and simmer for 15 minutes, stirring occasionally.

Add 1/2 cup of frozen peas or mixed vegetables and cooked chicken. Cover and cook for five minutes, stirring occasionally. Serve when the rice is tender and the liquid is absorbed.
