Ingredients:

1/2 kg chicken (breasts, legs, thighs)
1 cup onions, medium
2 cup mushrooms
60 gm butter
1 tbl olive oil
4 gm tomatoes
1 cup white wine
1 cup gravy mix
1 tsp fresh herbs, chopped
Instructions:
Instructions: Dice onions, tomatoes. Slice mushrooms.

If using a whole chicken cut into pieces (legs, breasts, thighs, wings) and season well.

Melt butter and oil in pan, add chicken, and cook until chicken is browned, turning often. Transfer to ovenproof dish.

Add chopped onion and mushrooms to pan and cook a furthur 3 minutes until softenned. Add tomatoes, wine, gravy, tarragon, salt and pepper. Mix ingredients to combine and bring to simmer 1 minute. Pour over the chicken.

Cover, bake in moderate oven 370F/185C for 40 minutes or until chicken is tender.

Finish with chopped herbs.
