Instructions: Sea or Kosher salt and freshly ground pepper, to taste
Grill boneless chicken until cooked; remove from grill, and cut into strips. Set aside. Heat olive oil in a skillet; add sliced mushrooms, cook and stir until tender, about 7 minutes. In a bowl, combine mushrooms, chicken and red bell pepper. Cook orzo according to package instructions. To make dressing: Blend 2 tablespoons olive oil, lemon juice, lemon zest, salt, pepper, thyme and garlic. Add half of the dressing to the chicken mixture; mix remaining dressing with the orzo, and feta cheese. To serve: spoon orzo onto individual serving platters prepared with a bed of your favorite salad blend or lettuce mix; top with chicken mixture. Garnish with a sprinkling of fresh parsley, salt and pepper (as desired) to taste. Email this Recipe:
