1/4 kg chicken
1 x red pepper sliced
1 cup water
1/2 tsp basil
salt and pepper
1 x green pepper sliced
1 med onion sliced
1 x 140g can tomato paste
Instructions:
Instructions: Place chicken in a roasting bag. Lay slices of peppers and onions over the bird. Mix tomato paste, water, oregano, basil, salt and pepper.

Pour the sauce over the chicken and seal the bag to stop the luscious juices escaping. Puncture a couple of small holes in the top of the bag with a skewer. Place in a baking dish and bake 180 deg C. for 1 1/4 hrs. Cut chicken into serving pieces and spoon sauce over.

Any left overs freezes well
