Ingredients:

450 gm chicken wings or chicken pieces unskinned
1 tbl light soy sauce
1 tbl dry sherry or rice wine
2 tsp groundnut oil
1 tbl fresh ginger finely chopped
1 tbl garlic finely chopped
1/2 tbl spring onions finely chopped
1/2 tbl black beans coarsely chopped
Instructions:
Instructions: If you are using chicken wings cut them in half at the joint.

If you are using chicken pieces cut them into 5cm chunks.

Mix the soy sauce and sherry or rice wine together and pour it over the chicken pieces.

Let the chicken marinade for about 1 hour then drain the chicken and discard the marinade.

Heat a wok or large frying pan.

Add the oil and when it is hot add the ginger.

Stir fry it for a few seconds and then add the garlic spring onions and black beans.

A few seconds later add the chicken wings or pieces and stir fry them for 25 minutes at a high heat until they are brown.

Then add the stock.

Bring the mixture to the boil and then reduce the heat.

Simmer for 15 minutes or until the chicken is cooked. (If you are using chicken breasts cook for just 5 minutes.)

This dish can be cooked ahead of time and reheated and it is also delicious served cold.

Serve this dish with plain rice and Stirfried Spinach with Garlic.

Wings are ideal for stir frying because they cook quickly but other parts of the chicken work just as well.
