Instructions: Skin the chicken. Cut the meat into neat, bite sized pieces and put them in a large bowl. Halve the pineapple. Using a serrated knife, remove the flesh from the skin, leaving the shell intact. Remove the core and chop the flesh into bite sized pieces and add them to the chicken. Mix the mayonnaise, sour cream, lemon rind and juice together. Add 6 tablespoons of the mayonnaise mixture and the celery to the chicken and pineapple in the bowl. Season to taste and mix well. Chill. Pile the mixture into the pineapple shells and arrange the shells on a serving platter. Spoon over the remaining chilled mayonnaise mixture
