Instructions: Broil the chicken for about 5 minutes on each side, or until no longer pink inside. Shred or cube the chicken. (I have found my salad shooter works great for this!) Mix enough salsa in to the chicken to moisten. Place a spoonful of the chicken/salsa mixture on half of the tortilla, top with cheese. Moisten edges of tortilla with a small amount of water, fold over and seal. Bake at 400 F for about 5 minutes or until tortillas start brown.
Serve with additional salsa, sour cream, or guacamole for dipping. Goes well with a salad and/or Spanish Rice. Email this Recipe:
