Instructions: Preheat oven to 400 degrees. Wash and pat dry chicken breasts. Cut slit in thick part of breast. Salt inside and outside of chicken breast. Put sliced Monterey jack cheese in each chicken breast.
Place chicken in glass dish or pie tin with slit side facing each other. Turn oven down to 350 degrees. Cook for 35 minutes. Remove from oven and let sit for 15 minutes. While chicken is cooking, prepare salsa (or prepare in advance). Cut up and mix all salsa ingredients together in a bowl. Let chicken rest for 15 minutes, then top it with salsa and serve with white rice and vegetable of your choice. Email this Recipe:
