3 tbl soy sauce
2 tbl lemon juice
1/4 tsp curry powder (or to taste)
63/1000 tsp pepper
1 clv garlic
1 lb boned, skinned chicken breasts
2 tbl corn oil
----------------- Peanut Sauce: ----------------
1 tsp corn oil
1/4 cup chopped onion
1/2 tsp ginger root, minced
1/2 cup peanut butter
1 cup water
Instructions:
Instructions: In small bowl, stir together soy sauce, lemon juice, curry powder, pepper and garlic Cut chicken in 1" cubes Add chicken to marinade and toss to coat Marinate 30 minutes, stirring occasionally Rinse bamboo skewers in water Thread with chicken pieces and brush with oil Broil 6" from heat about 5 minutes, until tender, turning occasionally Serve with Peanut Sauce

Peanut Sauce:
In 1 quart saucepan, heat oil over medium heat Add onion, ginger and pepper. Cook, stirring frequently, 1 minute Stir in peanut butter Gradually stir in water and soy sauce until well blended Bring to boil, stirring constantly until sauce thickens Serve hot or room temperature
