1/2 lb shrimp raw, peeled and deveined or 1/2 lb shrimp and 1 lb deboned chicken breast cut up into chunks
1 can tomatoes peeled and cut up + one can water
1 can tomato sauce
1/4 cup onions chopped fine
1/4 cup bellpeppers chopped fine
1/8 cup celery chopped fine
2 tbl oil
cayenne pepper
ground thyme
garlic
black pepper
Instructions:
Instructions: If you are using chicken, cook the chicken in oil until no longer pink on the outside. Remove the chicken from the oil add the onions, bellpeppers, and celery and saute until almost done. Drain the oil from the vegetables and add the chicken (if you are using it), vegetables, canned tomatoes, water, tomato sauce and enough spices to suit your taste. (Granny never measured her spices.) Let this simmer for about 30 minutes (enough time to let the spices and tomatoes come together). Add the raw, peeled shrimp and cook until the shrimp is done. Serve over rice or cornbread.
