2 tbl vegetable oil
1 lrg onion chopped
3 x garlic cloves finely chopped
1 lb chicken finely chopped
28 oz canned tomatoes chopped w/juice
(plum)
1 can tomato paste (6 oz)
1 tsp dried oregano
1 tsp dried basil
1 x bay leaf
1 cup dry red wine
1/4 tsp freshly ground black pepper
1 dsh cayenne pepper
Instructions:
Instructions: In a large saucepan, heat oil over medium heat. Add onion an cook until soft, about 3 minutes. Add garlic and cook and 1 minute longer. Add chicken and cook until white, about 4 minutes. Add tomatoes, tomato paste, oregano,
basil, bay leaf, wine, black peppers, and cayenne. Reduce heat and simmer 1
hour, until mixture thickens. Season with salt to taste.
