Instructions: Wash chicken and have ready to stuff. In a wide pan, pour in oil or butter and very gently fry the orzo until golden. (If available, you can use oven toasted ptitim, in which case the frying time is shorter). Add S & a lot of P, and water. Cook on low heat with cover on, until water is absorbed, about 10 minutes. It should be very al dente. Turn off heat and let sit to cool a little. Meanwhile chop garlic and then parsley in the Food Processor. Add these to orzo. Stuff chicken loosely, youll have a lot of extra stuffing. Place extra stuffing in oven baking bag. Place chicken breast side down on top.
Close bag and make holes on top of bag. Bake in preheated 350 F oven for 1 1/2 hours. Open bag, and carefully lift out the chicken. Pour out some of the stuffing into the bag - therell be a lot of juices. Close bag to keep warm. Return chicken breast side up to the oven, without the bag of stuffing. Bake until golden, about 15-20 minutes. Remove from oven and lift out chicken. Place all stuffing in warm baking dish, and mix accumulated juices. Either place chicken on top and bring to table, or cut pieces in kitchen and place on top of orzo stuffing, and serve. Unbelievably easy and so good... and a change from rice stuffing.
