Instructions: 1.Season chicken with salt and pepper.
2.Heat butter in frying pan, add chicken and saute gently until chicken is golden brown, about 4 minutes on each side. Remove chicken from pan. 3.Put a slice of ham on each piece of chicken, then top with a slice of cheese. Put on heatproof serving dish. Cook in moderate oven uncovered, for 5-10 minutes or until chicken is cooked through and cheese has melted. *Prepare the sauce: 1. Slice mushrooms and spring onions. 2. Add the garlic, mushrooms and a spoonful of butter to the pan and saute gently for 3 minutes. 3.Add wine and stock, bring to boil, reduce heat. 3. Simmer for 5 minutes, stirring occasionally. Add cream, chopped spring onions and mustard; stir until combined. Reduce to a sauce consistently. 4. Thicken slightly with cornflour if desired. Season with salt and pepper.
