Ingredients:

1 tsp Chopped Fresh Ginger
1 tsp Crushed Garlic
1/2 tsp Ground Coriander
1/2 tsp Ground Cumin
1 tsp Chili Powder
3 tbl Plain Yogurt
1 tsp Salt
2 tbl Lemon Juice
3 dsh Red Food Coloring (optional)
1 tbl Tomato Paste
1/2 lb Boned, Skinned Chicken Breast
1 x Onion, sliced
3 tbl Oil
6 x Lettuce Leaves
Instructions:
Instructions: Blend together the ginger, garlic, coriander, cumin, and chili powder in a large mixing bowl. Add the yogurt, salt, lemon juice, food coloring (if using), and tomato paste to the spice mixture.

Using a sharp knife, cut the chicken into pieces. Add the chicken to the spice mixture and toss to coat thoroughly. Marinate in the refrigerator for at least 3 hours, preferably overnight.

Arrange the oven in the bottom of a heatproof dish. Carefully drizzle half the oil over the onion. Arrange the marinated chicken pieces on top of the onion and cook under a preheated broiler, turning once and basting with the remaining oil, for 25-30 minutes.

Serve the chicken Tikka on a bed of lettuce and garnish with lemon wedges.
