Instructions: 1. In a nonstick skillet, heat oil; add scallions. Cook over medium-high heat, stirring frequently, 4 minutes, until softened. Add carrot and garlic; cook stirring frequently, 5 minutes, until carrot is softened.
2. Add wheat berries and juice to vegetable mixture; bring liquid to a boil. Reduce heat to low; simmer, stirring occasionally, 5 minutes, until liquid is absorbed.
