Instructions: Coat cold non-stick pan or wok with cooking spray; heat over medium- high heat. Add chicken; stir-fry 2 minutes. Remove chicken from pan. Add onion and red pepper; stir-fry 3-4 minutes, then add chicken again.
Reduce heat; sprinkle with flour. Stir-fry 30 seconds. Stir in milk; heat to boil, stirring constantly. Reduce heat; simmer and stir 2 minutes until thickened. Stir in 1/4 cup cheese; heat just until cheese is melted and chicken is hot. Serve over asparagus, topped with remaining cheese. Serves 2. Email this Recipe:
