Instructions: Cook the rice in plenty of boiling, salted water until just tender.
In a wok, heat the oil and stir fry the chicken for 2 to 3 minutes. Then add the broccoli and carrots and continue to stir fry for a further minute. Add the remaining ingredients and cook for a further 2 minutes, until the chicken is cooked through. Stir in the rice, season and serve at once. Email this Recipe:
