2 cup lowfat cottage cheese Lite and Lively

2 cup cooked chicken breast meat, diced
2 oz nonfat cheddar cheese
2 oz reduced fat cheddar cheese
1 can enchilada sauce mild
8 x nonfat flour tortillas
Instructions:
Instructions: Combine chicken through cheese. If making for adults add the green chiles. Omit for kids, or make 1/2 the enchiladas with them and half without. Spray a 9 x 13 dish with Pam. Coat with a layer of enchilada sauce. Fill and roll tortillas, placing them seam side down in baking dish. Top with additional sauce and green chiles (if you didnt use them all in the filling). Cover and bake at 350 for about 30 minutes or until hot.

These can be made entirely vegetarian by omitting the chicken. Double the amount of cheddar and add some crushed tortilla chips (ground to 1/4 cup crumbs). Do not rinse the cottage cheese for either version.

Serving Ideas : I served this with hoppin john (Zatarains mix), sauteed squash, zucchini and onions, and salad. The kids even liked it.
