The original recipe called for 2 1/2 c stock and 1/4 c unsalted butter.

I have adapted it to reduce the fat.

NOTES : I tried this recipe for dinner last night. My husband has never liked
couscous before, but I really like it so I figured Id give it a try.

After two helpings he pronounced it OK and said I could make it again
sometime. Big of him, I thought! Anyway, it is a tasty recipe.

The
softened apples add a moisture that couscous sometimes lacks. The

original recipe said it served 4, but it could have easily served 8.
