Instructions: Heat the oil in a large frying pan. Add the potatoes, onion and rosemary and saute over a medium heat for 5-6 minutes or until golden brown. Remove from the heat and keep warm.
Cut the focaccia in half, take the bottom piece and spread with the Mascarpone, then sprinkle with the Parmesan. Place under a hot preheated grill and cook for 1 minute until brown. Place the chicken pieces, then the onion and potatoes onto the grilled focaccia, replace the top and cook in a preheated oven 200 C, 400 F, gas mark 6 for 5 minutes. To serve, cut the focaccia into quarters and serve with a mixed salad. NOTES : To turn this sandwich snack into a meal, serve with a mixed salad.
