Ingredients:
Amount Ingredient
1 sm chicken, whole, no skin, R-T-C
4 cup nonfat chicken stock
1 cup water
1 lrg onion chopped
1 whl bay leaf
1/4 tsp thyme
2 tbl parsley
3 whl peppercorns
4 sm red potatoes quartered
3 med white potatoes cubed
1 sm baking potatoes cubed
1 med yellow potato cubed
1 whl ear of corn in chunks
1 tsp salt
4 whl capers
Instructions:
Instructions: Combine chicken, stock, water, onion, seasonings and simmer 2 hours until tender. Cool, cut chicken and discard bones and skin. Strain broth.

Add potatoes and boil 1 hour. Add chicken and corn. Cover and simmer 30 minutes. Add salt and pepper to taste and milk. Serve.

NOTES : My guess is that the original called for cream. I think Id try using the fat-free half and half instead of the milk.
