4 x chicken portions
grated rind and juice of 1 lemon
2 tbl cooking oil
1 x clove of garlic (optional)
3 tbl marmalade
1 tsp mixed dried herbs
1 tbl fresh parsley finely chopped

Instructions: Method
1. Place chicken joints in a suitable ovenproof dish.

2. Place all other ingredients in a bowl and mix together.

3. Spoon sauce over the chicken and leave to marinade for I hour basting occasionally.

4. After one hour place in an ovenproof dish (uncovered) in the oven: cook until chicken is crispy golden.

small oven: 200 degrees C approx 50 60 minutes PREHEATED bottom shelf
fan oven: 190 degrees C approx 45-50 minutes COLD START
