4 x carrots finely chopped
1 x green bell pepper finely chopped
1 x onion finely chopped
Instructions:
Instructions: In a small bowl, combine the curry, sugar, thyme, ground red pepper, and salt; mix well and use to coat the chicken.

In a large deep skillet, melt the butter over medium-high heat. Add the chicken and brown for 2 to 3 minutes per side. Add the carrots, bell pepper, and onion and cook for 5 minutes, stirring frequently. Stir in the coconut milk, cover, and cook for 5 minutes, or until no pink remains in the chicken.

This recipe yields 4 servings.
