Instructions: Heat the butter in a large skillet until foaming. Add the onion and rosemary and cook until the onion is soft. Add the chicken or turkey and potatoes, stir well, and cook for 3 to 4 minutes, pressing down with a spatula to form a flat cake. Lower the heat to medium-low and pour in the gravy and/or cream. Sprinkle with salt and pepper and cook for 5 minutes more. Turn out onto a serving platter and sprinkle with parsley.
