6 x Chicken Breasts Spilt and pounded
1 can Cumin Spiced Black Beans
1 med Can Whole Corn Drained
3 tbl Med Salsa
4 tbl Hot Salsa
Juice of Half a Lime at Room Temp
2 shot of Tequila
Instructions:
Instructions: Preheat Oven to 350. Combine the Black Beans, Corn, Salsas, Lime Juice and Tequila. Simmer until Thick about 20 minutes. Take the Chicken Breasts and Dredge them in Cumin & Ground Black Pepper. Sear Blacken them in a very hot Cast Iron Skillet. No Longer then 1 minute per side. In a Baking dish place the chicken on the bottom and top with the Black Bean & Corn Salsa, Jack or Pepper Jack Cheese. Place in Oven for about 15 to 20 minutes. Pull out and serve. Garnish with Blue Chips and Avocado.
