1 tbl peanut oil
1/2 tsp minced garlic
1/2 tsp rice vinegar
1/2 tsp soy sauce
1/2 tsp fresh ginger root
1/2 tbl sesame oil (Chinese )
1/4 cup chicken broth
2 oz cooked chicken breast halves sliced
2 tbl sherry
1 tbl smooth peanut butter
1/2 tsp smooth peanut butter
3/4 cup vermicelli cooked
Instructions:
Instructions: Heat peanut oil over high heat; add garlic and ginger and saute briefly. Add remaining ingredients except chicken, vermicelli and scallions. Bring to a boil. Reduce heat to low and cook, stirring constantly (I use a wire whisk) until sauce is smooth and thickened.

Add chicken and stir until well heated. Pour over pasta. Sprinkle with scallion (crushed peanuts on top are good).
