Ingredients:
Amount Ingredient
25 gm Butter, (1oz)
4 x Skinless chicken breast fillets
1 x Clove garlic, crushed
4 x Spring onions, diagonally sliced
3 tbl Freshly chopped sage
Grated rind and juice of 1/2-1 lemon
1 x 200 gram car creme fraiche, (7 fl oz)
2 tsp Cornflour, blended with
1 tbl Cold water
Instructions:
Instructions: 1. Heat the butter in a frying pan and cook the chicken and garlic for 12-15 minutes, stirring occasionally.

2. Add the onions, most of the sage, lemon rind and juice, creme fraiche, blended cornflour and seasoning. Cook for a further 4-5 minutes, stirring occasionally.

3. Transfer to a warmed serving dish, sprinkle with the remaining sage and serve with long grain and wild rice.

NOTES : A lightly-flavoured dish perfect for summer.
