Instructions: Heat the oil in a large pan or wok.
Add the chicken and garlic and stir-fry for 2-3 minutes. Add the peppers and cook for a further 2 minutes. Add the black bean sauce, spring onions and cashew nuts and cook for 2-3 minutes until warmed through. Serve immediately with rice or noodles.
