Oil for sauteeing
1/2 x onion chopped
4 x chicken thighs
1 cup chicken stock
1/4 cup white wine
1 cup fresh sage leaves coarsely chopped
1/2 cup oil-cured sun-dried tomatoes drained and chopped
Instructions:
Instructions: Heat oil in pan and, when it is hot, add onions and brown. Add chicken, browning on all sides. Add stock and wine to pan, deglaze, and bring to a boil. Reduce heat to simmer, and add sage and tomatoes. Simmer, uncovered, 20 minutes or until chicken is done all the way through and sauce has reduced by half.

Serve with rice.

Serves 2-4 depending on appetites
