Instructions: Heat 1 tbsp oil in a saucepan fry the onion and garlic until softened then add the tomatoes and basil.
Cover cook for 20 minutes purse and season to taste. Heat 1 tbsp oil in a frying pan brown the chicken all over season. Drain pat dry and season the spinach. Place in an ovenproof dish top with chicken then tomato sauce then cheese. Bake at 190C/375F/Gas Mark 5 for 25 minutes then serve hot with tagliatelle and salad. Serves 4 Email this Recipe:
