Instructions: Rinse and wipe the chicory dry.
Trim off the base and slice the chicory across the grain into 5mm rounds. Put these into a bowl breaking them up slightly with your fingers to separate the rings. Peel the oranges removing as much of the white pith as possible. Slice them in half then slice them across the grain into 5mm slices as well. Remove any pips. Add the oranges to the chicory and mix gently together. Put the salad oil lemon juice sugar salt and mustard into a screwtop jar and shake well or whisk all the dressing ingredients together in a bowl. Pour over the salad toss it well and allow it to stand for the flavours to develop for 15 minutes before serving. If you are using the crushed walnuts sprinkle them generously over the salad. They add a lovely crunch. The combination of slightly bitter chicory with the sweetness of oranges makes a marvellous refreshing salad. Add some cottage cheese and you have a delicious satisfying lowcalorie lunch. Serves 2 as a main course Serves 4 as a side salad Email this Recipe:
