1 pt sour cream
1/2 pkt ranch dressing mix
1 can diced mild green chiles (4 oz.) rinsed and drained
1 jar diced pimentos (2 oz.) optional
1/4 tsp salt
3 cup cooked rice not instant
1/2 lb Monterey jack cheese grated
3 x chicken breast halves cooked and chopped
Instructions:
Instructions: Preheat oven to 350 degrees. Combine sour cream, ranch dressing, chiles, pimentos and salt in a small bowl.

In a 8 x 8 inch casserole, spread 1 cup of the cooked rice. Top with half the sour cream mixture, half the cooked chicken and half the cheese. Repeat layers. Top with remaining l cup of rice.

Bake at 350 degrees until hot and bubbly, about 30 minutes. Remove from oven and sprinkle with Parmesan cheese. Return to oven for 5 - l0 minutes longer or until Parmesan melts. Serve with a steamed green vegetable.

Variation: Crab meat can be substituted for the chicken. Use 7 ounces crab and add one small can of drained black olives.
